Gluten Free  'Mellow Yellow' Banana Waffles with Caramelised Banana, Berries And Seeds

A healthy but indulgent breakfast, spiced with our delicious anti-inflammatory turmeric and cinnamon late blend

Makes 4 ( Recipe can easily be halved or doubled )


Ingredients

Waffles 

2 banana
1 cup almond meal
4 tbsp buckwheat flour
4 free range eggs
4 tsp Mellow Yellow Turmeric latte blend

Caramelised Bananas

2 bananas thickly sliced diagonally
2-3 tbsp Caster Sugar 
1 tbsp Butter or coconut oil
Pinch Cinnamon 

Toppings

Your favourite nust chopped  (walnuts/ almonds/ pecans macadamias etc)
Your favourite seeds (chia, pepita, sesame etc)
Fresh Berries
Maple Syrup
Thick greek or Coconut Yoghurt


Method

Make the Waffles

1. Mash the banana in a bowl add the egg and whisk well until quite smooth

2. Add the dry ingredients and stir to combine.

3. Preheat waffle maker to desired setting 

4. Pour a scant cup of batter into the machine. (Some machines will sound when the waffle is ready) When the waffle is firm and golden all over, carefully open the waffle maker and remove the waffle.

Caramelise the Bananas

1. Sprinkle the sugar and cinnamon onto a plate and dip the banana slices in the sugar mix to coat.

2. Heat a non-stick frypan over medium heat and a dollop of butter or coconut oil to the pan. 

3. When the oil is sizzling add the banana slices in a single layer.  When the bananas start to colour flip the slices over with a fork to cook the other side.  Remove from the heat until ready to serve.

Put it all together

Serve one or two waffles topped with a handful of berries and a few slices of caramelised banana. Sprinkle with your favourite nuts and seeds and a drizzle of maple syrup and a dollop of yoghurt.
